What I made with 4 pounds of stew meat from Costco! Amazing meal planning ideas!
When the possible news of a quarantine happening here in Madison, Justin and I hit Costco, Woodman’s and Aldi’s for our usual trip and extras. We didn’t go overboard, but I wanted items that could enhance meals while being able to make a lot of different options. That way our spirits would stay high with delicious food!
As I was browsing the meat section I grabbed some stew meat, to make some beef stew! Of course, nothing is small at Costco, so I got 4 pounds!
I was unsure of what I was going to do with 4 pounds of stew meat, but I jumped on Pinterest and started meal planning!
Here is what I made with 4 pounds of Stew Meat from Costco! All three of these are perfect for a week of meal planning for 2 people!
BEEF STEW
First up was the beef stew! I found something new from Plays Well with Butter! It was a Hawaiian Beef Stew! The recipe was for an instant pot, but I don’t have one. (I had one but didn’t like it & gave it to my sister!)
What I loved about it: (& changes I did, as I didn’t have everything or an instant pot)
- It was hearty & filling! Justin said it tasted a lot like bbg & LOVED it! I cannot wait to make it again!
- I don’t like celery in soup & didn’t have any so I didn’t put any in.
- Since I didn’t have an Instant Pot, I just had it on the stove on medium-low for a few hours in a dutch oven.
If you are looking for a new and hearty beef stew recipe, you NEED to try this one! You won’t regret it!
STEAK ALFREDO
My go-to Alfredo recipe is from the Magnolia Cook Book! Once you know how to make it, you will NEVER buy alfredo sauce again! It’s so easy, delicious, and gluten-free! Once I am done with the sauce, I let the steak simmer for at least 10 minutes to let it soften and warm up.
I may put a little more garlic than it calls for, but we LOOOOVE garlic in this house! It is worth the house smelling like garlic for a few days! So worth it!
Also, a great way to use up leftover chicken or steak! An easy recipe to throw in the middle of your meal planning for the week!

STEAK TACOS
Lastly, I got some organic corn taco shells and avocados today in our Imperfect Produce box, so tomorrow we are having tacos!
How I make them: so easy!
- Warm up the steak in a pan with some water and taco seasoning
- Warm up the shells in a pan with a little oil, until they are a little browned & warm
- Assemble:
- Shell
- Steak
- Shredded cheese of choice (we had Colby on hand)
- Sliced avocado
- Queso, Cholula & Sour Cream
- ENJOY! YUM!
I wish we would have had some kind of cabbage or lettuce for some crunch, but we didn’t have any on hand.
You don’t have to have a family in order to take full advantage of Costco! We LOVE Costco! We have learned how to navigate it and use it to work for us. I cannot wait to share what we get on a regular basis!
These are also good for meal planning. For which I do a lot, it’s been an easy way to stay on track with our budget.
